English lambs liver has a rich and full flavour. It has a low fat content and is high in iron and vitamin A making it a very healthy choice.

Take out the fridge at least 10 minutes before cooking.

Pat the liver dry with some kitchen roll.

Heat your pan to a high heat, add a little oil/fat and gently fry the liver for 2-3 minutes per side. (adding bacon is a great option.)

To finish season with salt and pepper then add a knob of butter and take off the heat.

Let the liver rest in the melted butter for a few minutes then serve.
